Chicken Noodle Soup in an Instant Pot Recipe

The wind is blowing, the temps are dropping, and all you want to do is lean over a bowl of warm, comforting soup. This chicken noodle soup in an Instant Pot recipe will solve all of your problems! It's quick, easy, and hearty.

Things You’ll Need

  • 2 tablespoons avocado oil

  • 3 chicken breasts

  • 2 cups chicken broth

  • 1/2 onion, diced

  • 2 to 3 garlic cloves, minced

  • 6 cups water

  • 1 tablespoon salt

  • 1 teaspoon ground pepper

  • 2 cubes chicken bouillon

  • 3 carrots, diced

  • 2 celery stalks, diced

  • 1 cup gluten-free lentil noodles or egg noodles

Tip

This gluten-free lentil pasta worked well in this recipe. The noodles held their shape. If gluten-free noodles are not required for your dietary needs, egg noodles are a great option to use in this chicken noodle soup.

Step 1: Cook Chicken

Press "Saute" button on the Instant Pot. Add the oil and chicken breasts. Brown each side about 5 minutes. Remove chicken. Pour in 1 cup chicken broth. Add the steaming rack and place the chicken breasts on the rack. Lock lid, seal valve, and cook on manual high pressure for 5 minutes. Let it natural pressure release for 7 minutes.

Tip

The steaming rack should come with your Instant Pot. This is a great steaming rack set if you don't have one. For the chicken to retain its moisture, it must be elevated out of the liquid.

Step 2: Remove Chicken and Prep Soup

Remove the chicken once done, and set aside to rest. While the chicken rests, deglaze the pot with the remaining chicken stock. Add onions, garlic, water, salt, pepper, bouillon, carrots, celery, and noodles to the Instant Pot. Lock lid, seal, and cook the soup mixture on manual high pressure for 4 minutes.

Tip

Don't be alarmed if your pot takes awhile to heat up. Because of the amount of liquid, the pot will take say "On" and preheat for about 10 minutes before it starts cooking at the full pressure, which is 4 minutes.

Step 3: Cut Chicken and Mix

While soup is cooking, cut chicken into small bite-sized squares. When soup finishes, flip the valve to "Venting" for quick pressure release. Remove the lid and turn off the Instant Pot. Stir and allow the soup to cool for about 5 minutes before adding in chicken. If chicken is added into hot liquid, it may overcook and make the chicken dry.

Step 4: Serve While Warm

Serve your chicken noodle soup while warm. Enjoy!
