How to Make Kewpie Mayo (Japanese Mayo)

Kewpie mayonnaise is a popular brand of Japanese mayonnaise. You can buy it at some grocery stores and Asian supermarkets, but it's surprisingly easy to make at home. Want to try it for yourself? Read on to learn how to make Kewpie mayo from scratch.

Things You’ll Need

  • 1 cup canola or vegetable oil

  • 2 egg yolks

  • 2 tablespoons rice vinegar

  • 1/2 to 1 teaspoon salt (optional)

  • 1/2 teaspoon dashi powder

  • 1/2 teaspoon Dijon mustard

Ingredients for Kewpie mayo (Japanese mayo)

Step 1

In a bowl, combine rice vinegar, salt, dashi powder and Dijon mustard. Whisk well.

Add the egg yolks and whisk.

Add the oil in a thin, steady stream while whisking continuously.

Slowly add oil and keep whisking

Tip

To make sure the ingredients emulsify, be sure to add the oil while whisking continuously.

Step 4

Continue whisking the mixture until the ingredients emulsify and thicken. Taste it and add more salt or dashi powder if you'd like.

Continue whisking until thick

Enjoy your homemade Japanese mayonnaise with sushi or however you typically use mayo.
